- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 cup vegetable oil or melted shortening
- 3/4 cup warm water (more if needed)
Instructions
- Begin by combining the flour, baking powder, and salt in a large bowl. Mix thoroughly with a whisk to ensure even distribution. Next, add the vegetable oil, stirring until the mixture achieves a crumbly texture, akin to coarse crumbs.
- Slowly incorporate the warm water into the flour mixture. Stir continually as you pour to form a soft, pliable dough. If needed, add more water little by little, a tablespoon at a time, to reach the desired consistency.
- On a lightly floured surface, turn out the dough and commence kneading by hand for about 2–3 minutes until it becomes smoothly combined and elastic. Divide the dough into 8 equal parts, shape them into balls, and allow them to rest covered for 15–20 minutes. This resting period allows the gluten to relax, making the tortillas easier to roll out.
- With relaxed dough ready, roll each ball into a thin circle, aiming for a width of about 6–8 inches. Preheat your skillet to medium-high. One by one, cook each circle in the hot, dry skillet, leaving it to cook for 30–45 seconds per side. Look for tell-tale puffing bubbles and light brown spots. Once cooked, transfer the tortillas to a clean kitchen towel to keep them warm before serving.
Notes
For softer tortillas, consider using a cloth to keep them covered after cooking; this retains warmth and moisture.
