Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup vegetable oil or melted shortening
  • 3/4 cup warm water (more if needed)

Instructions

  1. Begin by combining the flour, baking powder, and salt in a large bowl. Mix thoroughly with a whisk to ensure even distribution. Next, add the vegetable oil, stirring until the mixture achieves a crumbly texture, akin to coarse crumbs.
  2. Slowly incorporate the warm water into the flour mixture. Stir continually as you pour to form a soft, pliable dough. If needed, add more water little by little, a tablespoon at a time, to reach the desired consistency.
  3. On a lightly floured surface, turn out the dough and commence kneading by hand for about 2–3 minutes until it becomes smoothly combined and elastic. Divide the dough into 8 equal parts, shape them into balls, and allow them to rest covered for 15–20 minutes. This resting period allows the gluten to relax, making the tortillas easier to roll out.
  4. With relaxed dough ready, roll each ball into a thin circle, aiming for a width of about 6–8 inches. Preheat your skillet to medium-high. One by one, cook each circle in the hot, dry skillet, leaving it to cook for 30–45 seconds per side. Look for tell-tale puffing bubbles and light brown spots. Once cooked, transfer the tortillas to a clean kitchen towel to keep them warm before serving.

Notes

For softer tortillas, consider using a cloth to keep them covered after cooking; this retains warmth and moisture.
