  • 1 cup unsalted butter, softened
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 4 cups fresh strawberries, sliced
  • Whipped cream (for garnish)
  • Whole strawberries (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your three round cake pans.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract.
  4. Gradually add the dry ingredients to this wet mixture, stirring until the batter is lump-free.
  5. Divide the batter evenly among the three prepared cake pans and bake for 25-30 minutes.
  6. Let the cakes cool, then prepare the frosting by beating softened cream cheese and unsalted butter until light and fluffy, then add powdered sugar and 2 teaspoons of vanilla extract.
  7. Assemble the cake by layering frosting and sliced strawberries between the cake layers, frosting the top and sides of the cake.
  8. Decorate with whipped cream and whole strawberries.
