Instructions
- Preheat your oven to 350°F (175°C) and prepare your three round cake pans.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, cocoa powder, and salt.
- In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract.
- Gradually add the dry ingredients to this wet mixture, stirring until the batter is lump-free.
- Divide the batter evenly among the three prepared cake pans and bake for 25-30 minutes.
- Let the cakes cool, then prepare the frosting by beating softened cream cheese and unsalted butter until light and fluffy, then add powdered sugar and 2 teaspoons of vanilla extract.
- Assemble the cake by layering frosting and sliced strawberries between the cake layers, frosting the top and sides of the cake.
- Decorate with whipped cream and whole strawberries.
