Ingredients

  • 1/3 cup light corn syrup
  • 1/4 cup water
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups roasted nuts (almonds, peanuts, pistachios, or a mix)
  • 2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or neutral oil
  • 1/4 cup dried cranberries, cherries, or chopped dates (optional)
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Start by taking an 8×8-inch baking dish and lining it with parchment paper. Be sure to grease it lightly to ensure your nougat releases easily once set.
  2. If your nuts aren’t pre-roasted, preheat your oven to 350°F (175°C). Spread the nuts evenly on a baking tray and roast them for 8-10 minutes until fragrant and lightly golden.
  3. Using your stand mixer, whip the egg whites and salt until you achieve soft peaks.
  4. In a saucepan, combine the granulated sugar, light corn syrup, and water. Heat this mixture over medium heat until it starts bubbling and reaches a temperature of 250°F.
  5. Slowly and carefully pour the bubbling sugar syrup into the whipped egg whites while the mixer is running on medium speed.
  6. Gently fold in the vanilla extract, roasted nuts, and any additional ingredients.
  7. Place the baking dish in the refrigerator for at least 2 hours, allowing the nougat to set properly and firm up.
  8. Once the nougat is firm, lift it out using the parchment paper and place it on a cutting board. Cut into bars and dip in melted chocolate.
