- 2 large yellow onions

- 1/2 cup Gruyère cheese
- 2 sheets puff pastry
- 1 egg
- 1 tablespoon milk

- Begin by heating butter and olive oil in a large pan over medium heat. Once the butter has melted, add the sliced onions. Cook them slowly, allowing them to caramelize and develop a rich, golden-brown color. Patience is key here; let the onions do their thing for about 15-20 minutes. Stir occasionally to prevent them from burning, ensuring an even caramelization. The sweetness of the onions will add a delightful depth of flavor to the rolls.
- Once the onions are caramelized, add minced garlic and fresh thyme to the pan. Cook for an additional 1-2 minutes until fragrant, then remove from heat and let the mixture cool.
- In a mixing bowl, combine the ground sausage, Worcestershire sauce, salt, pepper, the cooled onion mixture, and grated Gruyère cheese. Mix everything thoroughly until well combined.
- On a lightly floured surface, take your puff pastry sheets and roll them out gently to increase the surface area. Cut the pastry into long strips, about 3 inches wide.
- Place a generous amount of the sausage filling along one edge of a pastry strip. Roll the pastry tightly over the filling, sealing the edges with your fingers.
- Beat the egg and milk together to create an egg wash. Brush the tops of the rolls with this mixture and lightly score the top of each roll.
