- 3 cups finely shredded coconut (plus extra for rolling)
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 pinch of salt (optional)
Instructions
- In a large mixing bowl, take your 3 cups of finely shredded coconut and add the can of sweetened condensed milk along with the teaspoon of vanilla extract. If you choose to use it, sprinkle in a pinch of salt. Use a sturdy spatula to mix all the ingredients together until they form a sticky, dough-like consistency.
- Once your mixture is well combined, cover the bowl tightly with plastic wrap and place it in the refrigerator. Allow it to chill for about 20 to 30 minutes.
- After the dough has chilled, take it out from the refrigerator. Using either a tablespoon or a small cookie scoop, scoop out portions of the mixture and roll them into bite-sized balls in your hands.
- Once the snowballs have been shaped, roll each ball in a shallow dish filled with extra shredded coconut.
- After rolling in the coconut, place the snowballs on your lined tray. Chill the tray in the refrigerator for at least an hour.
