- 8 oz cream cheese, softened
- 1/2 cup erythritol or preferred sweetener
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cream cheese and erythritol until smooth.
- Add the pumpkin puree, eggs, vanilla, pumpkin pie spice, baking powder, and salt. Mix until well combined.
- Grease a mini muffin tin and pour the mixture evenly.
- Bake for 18-20 minutes until set.
- Let cool before serving.
