Ingredients

  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 1/2 cup erythritol or preferred sweetener
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the cream cheese and erythritol until smooth.
  3. Add the pumpkin puree, eggs, vanilla, pumpkin pie spice, baking powder, and salt. Mix until well combined.
  4. Grease a mini muffin tin and pour the mixture evenly.
  5. Bake for 18-20 minutes until set.
  6. Let cool before serving.
