  • 2 to 3 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest (optional for garnish)

Instructions

  1. Begin by placing the softened unsalted butter in a mixing bowl. Add the powdered sugar to the bowl. Using an electric mixer, cream them together on medium speed until the mixture is light and fluffy, usually taking about 2–3 minutes.
  2. Next, add the fresh lemon zest, vanilla extract, and salt to the creamed butter and sugar mixture. Beat on low speed until all ingredients are well combined.
  3. Gradually add the all-purpose flour to your butter mixture, mixing just until the flour disappears.
  4. Using a tablespoon, scoop out portions of the dough. Roll these portions into balls and gently flatten them to form round disks.
  5. Place them on your prepared baking sheet, ensuring they are well-spaced. Preheat your oven to 325°F (165°C) if you haven’t already.
  6. Place the baking sheet in the oven and allow them to bake for about 12–15 minutes.
  7. After baking, let the cookies rest on the baking sheet for about 5 minutes, then carefully transfer them to a wire rack to cool completely.
  8. While the cookies are cooling, combine the powdered sugar with 2 to 3 tablespoons of fresh lemon juice to make the glaze.
  9. Once the cookies have cooled completely, drizzle the lemon glaze over each cookie and sprinkle with additional lemon zest if desired.
