  • 1 cup fresh blackberries, slightly mashed
  • 4 small jalapeño peppers, thinly sliced, most seeds removed
  • 4 thick slices mozzarella or provolone cheese
  • 2 tablespoons avocado oil or olive oil
  • 1/2 cup dry white wine or chicken bone broth
  • Handful of fresh parsley or basil, chopped (for garnish)

Instructions

  1. Begin by preheating your oven to 375°F (190°C). While it’s heating, take your chicken breasts and rub them thoroughly with the oregano, garlic powder, sea salt, and black pepper.
  2. Next, carefully slice each chicken breast lengthwise, creating a pocket in the meat.
  3. Stuff each pocket with a slice of cheese, followed by the thin jalapeño slices, and a generous spoonful of the mashed blackberries.
  4. In an oven-safe skillet, heat the avocado or olive oil over medium heat. Once hot, sear the stuffed chicken breasts for about 4 minutes per side.
  5. Add the white wine or chicken bone broth to the skillet and transfer it to the preheated oven. Bake for 12–15 minutes, or until the chicken is cooked through.
  6. Once out of the oven, remove any toothpicks and garnish your stuffed chicken with freshly chopped parsley or basil.

Notes

For a creamier filling, consider adding cream cheese to the blackberry mixture.
