- 1 cup fresh blackberries, slightly mashed
- 4 small jalapeño peppers, thinly sliced, most seeds removed
- 4 thick slices mozzarella or provolone cheese
- 2 tablespoons avocado oil or olive oil
- 1/2 cup dry white wine or chicken bone broth
- Handful of fresh parsley or basil, chopped (for garnish)
Instructions
- Begin by preheating your oven to 375°F (190°C). While it’s heating, take your chicken breasts and rub them thoroughly with the oregano, garlic powder, sea salt, and black pepper.
- Next, carefully slice each chicken breast lengthwise, creating a pocket in the meat.
- Stuff each pocket with a slice of cheese, followed by the thin jalapeño slices, and a generous spoonful of the mashed blackberries.
- In an oven-safe skillet, heat the avocado or olive oil over medium heat. Once hot, sear the stuffed chicken breasts for about 4 minutes per side.
- Add the white wine or chicken bone broth to the skillet and transfer it to the preheated oven. Bake for 12–15 minutes, or until the chicken is cooked through.
- Once out of the oven, remove any toothpicks and garnish your stuffed chicken with freshly chopped parsley or basil.
Notes
For a creamier filling, consider adding cream cheese to the blackberry mixture.
