  • 3 garlic cloves, minced
  • 2 tablespoons red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tablespoon fresh lime juice
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons chopped fresh cilantro
  • Optional: 1/4 teaspoon red pepper flakes or 1 teaspoon chili paste
  • Optional: 1 cup baby spinach or kale

Instructions

  1. Start by patting the salmon fillets dry using a paper towel. Season both sides with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat and sear the salmon fillets.
  3. Add butter and minced garlic to the skillet, sauté until fragrant.
  4. Stir in curry paste and allow it to bloom on low heat.
  5. Pour in coconut milk and simmer for about 5 minutes.
  6. Add lime juice and any greens if using, stir until just wilted.
  7. Return the salmon to the skillet and simmer for a few minutes with the sauce.
  8. Garnish with cherry tomatoes, cilantro, and lime wedges before serving.
