Description

Quick and Easy Mediterranean Dinner brings vibrant flavors of the Mediterranean coast with smoky grilled chicken, fresh herbs, and tangy yogurt sauce.

Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts, cut into cubes
  • 1 cup Greek yogurt
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cucumber, grated
  • 2 tablespoons fresh mint, chopped
  • 1/2 cup Greek yogurt for sauce
  • 1 tablespoon lemon juice for sauce
  • 1 garlic clove, minced for sauce
  • 4 pita breads, warmed
  • 2 cups cooked rice or salad for serving
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Begin by preparing the marinade, an essential step that infuses the chicken with incredible flavor. In a large bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, dried oregano, salt, and black pepper. Stir these ingredients together until you achieve a smooth and creamy marinade that’s rich in flavor.
  2. Now it’s time to add the cubed chicken to the marinade. Toss the chicken pieces thoroughly until they’re completely coated in the marinade. Cover the bowl with plastic wrap and place it in the refrigerator to marinate for at least 30 minutes.
  3. While the chicken marinates, prepare a refreshing yogurt sauce by mixing together Greek yogurt, grated cucumber, chopped mint, lemon juice, minced garlic, additional salt, and black pepper to taste.
  4. If using wooden skewers, soak them in water for about 20 minutes. Thread the marinated chicken onto the skewers.
  5. Preheat your grill, grill pan, or skillet over medium-high heat and lightly oil the cooking surface. Carefully place the chicken skewers on the grill and cook for several minutes on each side until browned and cooked through.
  6. Once fully cooked, allow the skewers to rest for a few minutes. Serve hot with warm pita breads, cooked rice, salad, and the yogurt sauce. Top with fresh parsley, mint, and lemon wedges.

Notes

Ensure the chicken is cooked to an internal temperature of 165°F for safe consumption. Marinate the chicken longer than recommended for more intense flavor—up to 4 hours for the best results.
