Description

A flavorful yet nutritious snack that delights both the taste buds and the body.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 ½ cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • ½ cup Parmesan cheese
  • 2 large eggs
  • ¼ cup almond flour (or all-purpose flour)
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for greasing the muffin tin)

Instructions

  1. Start by preheating your oven to 375°F (190°C). Grease your muffin tin with olive oil or line it with muffin liners.
  2. Squeeze the grated zucchinis to extract excess moisture.
  3. In a large mixing bowl, combine the grated zucchini, shredded chicken, cheddar cheese, and Parmesan. Add eggs, almond flour, baking powder, garlic powder, salt, and pepper. Mix until combined.
  4. Spoon the mixture into the muffin cups, filling them almost to the top.
  5. Bake for 20-25 minutes until golden brown and firm to the touch.
  6. Cool briefly before removing from the tin and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. These muffins can also be frozen for up to three months.
