  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Begin your culinary adventure by bringing a large pot of salted water to a boil. Once boiling, gently add the linguine pasta and cook according to the package instructions, usually around 8-10 minutes, until it’s al dente. When the pasta is ready, drain it and set it aside, reserving some of the pasta water in case you need to adjust the sauce later.
  2. Next, season the sliced chicken breast strips generously with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the chicken strips, allowing them to sear for about 5-7 minutes or until they are golden brown on all sides. Ensure that the chicken is cooked through and no longer pink in the center. Once done, transfer the chicken to a plate and cover it to keep it warm while you prepare the sauce.
  3. In the same skillet, reduce the heat to medium-low and add the 4 tablespoons of unsalted butter. Allow the butter to melt, and then add the minced garlic. Sauté the garlic for about 1-2 minutes or until it’s fragrant, taking care not to burn it. Incorporate the optional red pepper flakes here if you want to add a bit of heat to your dish.
  4. Next, pour in the chicken broth and, if you choose, the dry white wine. Stir the mixture and let it simmer for about 3-5 minutes to meld the flavors together while reducing slightly. Then, add the fresh lemon juice, which will enhance the overall taste of the dish dramatically. Now, toss in the chopped fresh parsley for that vibrant touch.
  5. Finally, return the cooked chicken back into the skillet, along with the linguine. Toss everything gently until the pasta and chicken are well coated with the delicious sauce. If you find that the pasta seems a bit dry, you can add a splash of the reserved pasta water to achieve the desired consistency. Once everything is nicely combined and heated through, your Chicken Scampi is ready to be served.
