- 1 sheet puff pastry, thawed
- 1 cup diced pumpkin, roasted
- 4 oz chorizo sausage, finely chopped
- 1 medium onion, thinly sliced
- 1 tbsp olive oil
- 1 egg, beaten (for egg wash)
- Salt and black pepper, to taste
- Optional: fresh thyme leaves
Instructions
- In a skillet, heat the olive oil over medium-low heat. Add the thinly sliced onion and a pinch of salt. Cook gently, stirring occasionally, allowing the onions to release their sugars and become a deep golden brown. This slow caramelization process takes about 15–20 minutes but is worth the intense, sweet flavors it imparts.
- Once the onions are caramelized to perfection, transfer them to a mixing bowl. Add the roasted pumpkin and finely chopped chorizo. Season the mixture with salt, black pepper, and add fresh thyme leaves for a fragrant touch. Combine well, ensuring each ingredient is evenly distributed for a harmonic bite every time.
- Roll out the thawed puff pastry sheet and cut it into 4–6 equal rectangular pieces depending on your desired serving size. Position the filling centrally on each rectangle, then fold the pastry over, creating neat edges. Use a fork to press and seal the edges, ensuring each hand pie is carefully enclosed.
- Transfer the sealed pies to a parchment-lined baking sheet. Brush each one with the beaten egg to promote a golden, glossy finish. Place the tray in a preheated oven and bake for 20–25 minutes, until the hand pies are puffed and display a luscious golden hue.
Notes
These hand pies can be served warm or at room temperature. Vacuum seal leftovers for freshness.
