Instructions

  1. Start by preheating your oven to 375°F (190°C). This temperature is crucial for achieving a beautifully baked casserole. As your oven heats, lightly grease your 9×13 inch baking dish to ensure that the casserole does not stick.
  2. In a large mixing bowl or blender, combine the eggs, full-fat milk (or heavy cream), and sour cream. Add in the flour, baking powder, salt, ground black pepper, onion seasoning, and garlic seasoning. Whisk or blend together until the mixture is completely smooth. This step is essential to achieve a fluffy texture in the casserole.
  3. Pour a thin layer of the egg mixture into the bottom of your prepared baking dish. Next, add half of the drained and dry roasted green chiles, spreading them evenly over the egg mixture. Following the chiles, sprinkle ½ cup of the shredded cheddar and 1 cup of shredded pepper jack cheese over the chiles.
