- 1 pint cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp hot honey (plus extra for drizzling)
- 1 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp crushed red pepper flakes (adjust to taste)
- Salt and black pepper, to taste
- 1 large burrata ball
- Fresh basil, for garnish
- Toasted baguette slices or flatbread, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, minced garlic, crushed red pepper flakes, and balsamic vinegar. Season with salt and pepper.
- Roast for about 18 to 20 minutes until tomatoes are soft and slightly blistered.
- Stir in one tablespoon of hot honey, place burrata in the center of the tomatoes.
- Return the dish to the oven for another 5 minutes to warm the burrata.
- Drizzle with more hot honey, garnish with fresh basil, and serve with bread.
Notes
For a creamier texture, break up burrata before serving so it melts into the tomatoes.
