- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 1/2 cups shredded cheese (cheddar, mozzarella, or blend)
- 4 large flour tortillas
- 2 tablespoons butter or oil
- 2 tablespoons cream cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped green onions
Instructions
- In a large mixing bowl, take your cooked shredded chicken and add in the buffalo sauce, cream cheese, garlic powder, onion powder, salt, and black pepper. Stir everything together until the chicken is well coated in the spicy mixture.
- Next, place a skillet over medium heat and let it warm up.
- Grab a large flour tortilla and lay it flat on a clean surface. On one half of the tortilla, sprinkle a layer of shredded cheese. Next, spoon a portion of the buffalo chicken mixture over the cheese, followed by another sprinkle of cheese on top.
- In the same skillet, add a tablespoon of butter or oil and allow it to melt. Place the folded quesadilla onto the skillet and let it cook for 2–3 minutes until the underside turns golden brown and crispy.
- Once fully cooked, remove the quesadilla from the skillet and let it rest for about 1 minute. This resting period allows the cheese to set slightly, making for easier cutting.
Notes
Feel free to play around with the cheese options; a mix of cheddar and pepper jack can add a nice heat.
