Description

When it comes to classic Mexican comfort food, Beef Enchiladas with Red Sauce take center stage with their vibrant flavor and fulfilling textures.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups red enchilada sauce (homemade or store-bought)
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Start by preheating your oven to 375°F (190°C). In a large skillet over medium heat, combine the ground beef and diced onion. Cook them together, stirring occasionally until the beef is perfectly browned and the onions turn a translucent hue.
  2. Introduce additional flavor by adding minced garlic, ground cumin, chili powder, and smoked paprika to the skillet. Don’t forget to season with salt and black pepper to taste. Let these spices cook with the beef for about 2 more minutes, stirring frequently.
  3. Once the beef mixture is cooked to perfection, transfer it to a bowl and stir in 1 cup of shredded cheddar cheese. Prepare your baking dish by spreading a thin layer of red enchilada sauce across the bottom.
  4. Spoon a portion of the beef mixture onto each tortilla, rolling them tightly. Place them seam-side down in the prepared dish. Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle with cheese. Bake for about 20-25 minutes until the cheese is melted and bubbly.

Notes

Ensure that the beef is well-browned, as this enhances the overall flavor of the enchiladas. If the enchilada sauce is too thick, thin with a bit of water for easier spreading.
