- 2 large whole-wheat tortillas
- 2 large eggs, scrambled
- ½ cup cottage cheese
- 1 ripe avocado, sliced
- ¼ cup diced tomato
- 2 tbsp chopped fresh cilantro
- Salt and pepper, to taste
- Cooking spray (or a little olive oil)
Instructions
- Begin by heating a nonstick skillet over medium heat, applying a light coating of cooking spray or a touch of olive oil.
- Add your scrambled eggs to the hot skillet, using a spatula to gently stir and fold them until just set.
- Lay each whole-wheat tortilla flat on a clean surface. Begin spreading a generous layer of cottage cheese in the center.
- Top the cottage cheese layer with the scrambled eggs, followed by slices of ripe avocado. Add the diced tomato and fresh cilantro for a burst of color and flavor.
- Fold the sides of the tortilla in, then roll tightly from bottom to top, securing all the fillings inside.
- Once toasted, remove the burritos from the skillet, slice them in half, and serve warm for the ultimate breakfast treat.
